Lobster Rollups

Yield:

Ingredients:

  1. 2 cups cold (cooked) Maine lobster meat
  2. 1-2 Tablespoons scallions, thinly sliced
  3. 1 cup Swiss cheese, shredded
  4. 1/2 cup mayonnaise
  5. 2 teaspoons fresh lemon juice
  6. 2 teaspoons salt
  7. Dash pepper
  8. 4 flour tortillas
  9. 4 slices bacon, cooked
  10. Fresh red or green leaf lettuce torn into pieces
  11. 1 tomato, chopped
Directions:

Combine lobster meat, scallions, cheese, mayonnaise, lemon juice, salt and pepper.

Warm flour tortillas in microwave between damp paper towels before assembling.
 
Spread lobster mixture evenly over each tortilla.
 
Place one slice of bacon, a few lettuce leaves and chopped tomatoes over lobster mixture. 

Roll tortillas and serve.
