Garbanzo Pita Pockets

  1. 1 can (15 oz.) garbanzo beans, rinsed and drained
  2. 1 cup spinach, shredded
  3. 2/3 cup seedless grapes, halved
  4. 1/2 cup red bell pepper, chopped
  5. 1/3 cup onion, finely chopped
  6. 1/4 cup mayonnaise
  7. 2 tablespoons poppy seed salad dressing
  8. 4 pita bread rounds, halved crosswise
  9. 1/2 cup Swiss cheese, shredded

In a large bowl, combine garbanzo beans, shredded spinach, grapes, bell pepper, celery and onion. In a small bowl, stir together
mayonnaise and poppy seed dressing. Add to bean mixture; toss to coat. To serve, spoon the bean mixture into pita bread halves. Top with cheese.
