Curried Chicken Pita Pockets

Ingredients:

  1. 3/4 cup mayonnaise
  2. 1 teaspoon soy sauce
  3. 1 teaspoon lemon juice
  4. 1/2 teaspoon curry powder
  5. 1 small onion, finely chopped
  6. 9 ounces boneless, skinless chicken breasts, fully cooked
  7. 1-1/2 cups green grapes, seedless and halved
  8. 3/4 cup celery, chopped
  9. 1/2 cup almonds, sliced
  10. 10 pita bread, halved
Directions:

In a large bowl, combine mayonnaise, soy sauce, lemon juice, curry powder and onion. Stir in chicken, grapes and celery; refrigerate.

Just before serving, add almonds. Stuff about 1/4 cup into each pita half.
