Slow Cooker French Beef Stew

Yield:
8 to 10 servings

Ingredients:

  1. 3 medium potatoes, peeled and cut into 1/2 inch cubes
  2. 2 pounds beef stew meat
  3. 4 medium carrots, sliced
  4. 2 medium onions, sliced
  5. 3 celery ribs, sliced
  6. 2 cups tomato juice
  7. 1 cup water
  8. 1/3 cup quick-cooking tapioca
  9. 1 Tablespoon granulated sugar
  10. 1 teaspoon dried basil
  11. 1/2 teaspoon pepper
Directions:

Place the potatoes in a greased 5- quart slow cooker. Top with the beef, carrots, onions and celery.

In a mixing bowl, stir together tomato juice, water, tapioca, sugar, basil and pepper. Pour over the vegetables. Cover and cook on LOW for 9 to 10 hours or until vegetables and beef are tender.
