Spinach with Raisins, Pine Nuts and Apples

  1. 2 large bunches of spinach
  2. 2 tablespoons olive oil
  3. 1/4 cup raisins
  4. 1/4 cup pine nuts
  5. 1/4 cup apple, peeled and cubed
  6. 4 tablespoons chopped onion
  7. 1/8 teaspoon salt

Wash and dry spinach. Heat oil in large, heavy skillet. Cook raisins, pine nuts, apple and onion in oil over medium heat about five minutes, stirring occasionally until raisins are plump. Stir salt into raisin mixture. Gradually add spinach. Toss just until spinach is wilted. Serve immediately.
