Blue Cheese Topped Steak

  1. 4 strip steaks-about 12 oz. each
  2. 1/8 teaspoon pepper
  3. 1/8 teaspoon salt
  4. 4 ounces crumbled Blue cheese
  5. 2 Tablespoons butter, softened
  6. 1 Tablespoon chopped parsley

Season steaks with salt and pepper. Grill steaks, covered, about 6 minutes per side, or until desired doneness.

Meanwhile, blend together bleu cheese and softened butter in small bowl until creamy. Equally divide bleu cheese mixture and place a scoop on top of each steak. Leave steaks on grill until butter melts. Garnish with parsley.
